Of Argentine origin, this creative chef has it clear:
the secret of his dishes is the texture and quality of his products.
With only 35 years, Matías N. Provvidenti is the one bringing to life the dishes of one of the hidden gems of Mallorca, 'UMI Mallorca'. At Umi Matías applies much of the knowledge acquired not only during his professional training, but also during his four years of residence in Barcelona (during which he worked in renowned restaurants and as food stylist for his cousin and mentor Adrian Geralnik, chef and gastronomic photographer).
He continued his training in Japan, the Philippines, Southeast Asia, India, Central and South America, among many other countries and cities.
Since the birth of Umi, Matías has created each of his dishes, including vegetarian and vegan options on the menu, playing with textures, flavors and colors of the land, the sea and the air. You could say that his style is ¨signature cooking¨ with notable Asian influences among others. The basis of all these dishes, for Matías, is using raw materials of the highest quality.

Currently he continues with his training in different culinary fields and his curiosity, determination, talent and passion have made Matías, in his time at 'La Despensa del Baron' appear in the Michelin Guide 2016 as one of the recommended restaurants in Mallorca. Dishes of meticulous presentation, explosive flavors and a chef who we will continue hearing of.

Poke bowls were a traditional Hawaiian meal for centuries, a combination of raw fish and rice, which is served with different fresh elements. A delicious mix of raw and cooked ingredients, cold and hot, crispy and soft, all combined in the same bowl.

UMI is the first poke bowl restaurant in Mallorca, that presents this new trend of cooking with Asian inspired dishes and is perfectly located in Puerto Adriano "on top de la Oca"
